Pineapple Pasta Salad

Penne, rigatoni, fusilli and couscous are ideal for pineapple pasta salad.


There are many different ways to prepare pineapple pasta salad. Some recipes present the dish as a dinner-type salad that contains meats, vegetables, eggs and spices. But others call for preparing the salad with yogurt or cream and other fruits so that it serves as a dessert. No matter how you prepare the salad, always use small pasta pieces like shells, couscous or rigatoni.


Instructions


Prepare the Pasta


1. Bring 2 cups of water to a rolling boil in a medium-size pot.


2. Add 1 cup of small pasta pieces.


3. Cook the pasta according to the directions on the pasta's package.


4. Drain the pasta in a strainer.


5. Put the pasta in a large bowl and put it in the refrigerator to cool.


Prepare the Pudding


6. Pour one package of instant lemon pudding mix into a medium-size bowl.


7. Add 2 cups of milk.


8. Stir the milk and pudding mix with a wooden spoon until the mix is completely dissolved.


9. Chill the pudding in the refrigerator. It should set in about 5 minutes.


Blend Remaining Ingredients


10. Check that the pasta is completely cooled. When it's cold, remove it and the pudding from the refrigerator.








11. Scoop the pudding into the pasta with the wooden spoon.


12. Open one can of crushed pineapple and drain the fruit in the strainer.


13. Add the pineapple to the pasta and pudding.


14. Add 1 cup of whipped cream to the bowl.


15. Blend the ingredients together with a wooden spoon.


16. Return the salad to the refrigerator for an hour before serving.
