Make Grilled Cheese Sandwiches With Goat Cheese Fig Paste And Fresh Basil

Grilled cheese sandwiches with goat cheese, fig paste and fresh basil are a new twist on the classic American grilled cheese, typically made with cow's milk cheddar cheese. These grilled cheese sandwiches are sophisticated and elegant enough to serve to even the stuffiest gourmands. Serve this grilled cheese sandwiches with a glass of crisp, dry white wine and homemade sweet potato chips or French fries.


Instructions


1. Spread the chevre onto 4 slices of bread and top each one with 1/4 of the fresh minced basil.


2. Place the pitted figs in small bowl and add the extra virgin olive oil. Mash the mixture with the tines of a fork to form a very thick paste. Spread the paste over the other 4 slices of bread. Close the sandwiches and coat all sides of the sandwiches with nonstick cooking spray.


3. Heat a large nonstick skillet over medium heat and add two sandwiches. Press gently on the tops of the sandwiches with a spatula and cook for 2 to 3 minutes on each side or until the bread is lightly toasted. Repeat this process with the remaining sandwiches.








4. Transfer the sandwiches to individual serving plates or a large serving platter and scatter the halved campari tomatoes around the sides. Serve immediately while piping hot.
