Make Carolina Bbq Sauce

Enjoy a barbecue pork sandwhich with Carolina-style sauce.


From the Southwest to the Southeast, every region in the United States has its own flavor of barbecue sauce. Inspired by their Mexican neighbors, Texans like their sauce with a bit of spice. In Missouri, cooks sweeten their sauces with molasses. Sauce in the Carolinas is blended with vinegar and mustard, giving it a distinctly tart flavor. The following recipe yields approximately 24 oz. of Carolina-style barbecue sauce.


Instructions


1. Melt 2 tbsp. of butter in a saucepan.








2. Add 1/4 cup of finely minced white onion and saut it until soft.


3. Stir in mustard, vinegar, water, brown sugar, Worcestershire sauce, salt, pepper flakes, cayenne pepper, black pepper and hot sauce.


4. Simmer the ingredients on medium-low for 10 minutes, stirring occasionally. Carolina sauce is not simmered as long as tomato-based sauces.


5. Store barbecue sauce in a sealed jar, in the refrigerator. Refrigerate the sauce for at least a day before using it to allow the flavors to develop.
