Most recipes that call for green onions only require the green tops as an ingredient. Though green onions are fairly inexpensive to buy in general, especially if they are not organic, you can stretch out your green onions and get multiple uses from them. By only using the portion you need -- the green tops -- and preserving the bulb end, you can regenerate the green onion plant and get three or more uses out of one store-bought green onion.
Instructions
1. Chop the part of the green onion that's actually green and use it in a recipe as needed.
2. Preserve the bulb end, keeping the remaining white part with roots intact.
3. Fill a tall glass with about 1 inch of water.
4. Place the bulb ends of the green onions in the glass, with the roots facing down. Make sure the roots are covered by the water.
5. Place the glass in a sunny location or under a UV lamp. Refresh the water every two days. In about seven days, the green onion will send out shoots, forming green onion tops once again. The
