Make A Western Egg And Potatoe Casserole

With this delicious dish you will learn that breakfast can be good and you can have it any time of the day. You may wish to prepare this the night before and simply place it in the oven in the morning for a quicker breakfast.


Instructions


1. Preheat a skillet and brown your chosen meat. Set aside. While meat is browning, chop onion and bell pepper into small pieces and set aside.


2. Spray a 2-quart square baking dish with cooking spray to help prevent casserole from sticking. Some sticking is going to occur but the cooking spray helps keep it from making a huge mess in your dish. Drain meat. I usually rinse my meat if it is sausage to make sure the grease is completely removed. You don't want grease floating on top of your casserole.


3. Layer the ingredients. Begin with a very thin layer of meat, then add thin layers of onions, peppers, cheese and hash browns. Make sure you rotate the areas where you place the cheese so it doesn't all glob into one area of the casserole. Top with a layer of cheese to almost completely cover the top.


4. Break your eggs in a large bowl. Add salt and pepper if desired, add Mrs. Dash spices, then hand beat or use a whisk to beat mixture. Add water and continue beating mixture. Mixture is ready when you see no more whites separated from the yolks. Pour mixture very slowly over the layers you placed in the casserole dish. Be careful not to let it spill over the edge of the casserole dish.


5. Bake at 350 degrees for 45-60 minutes or until top is golden brown and you can see no bubbling of the egg mixture. Remove from oven and let cool 10 minutes before cutting. Cut into 9 squares or smaller if you desire and serve.
