Make Instant Dhokla

Dhokla, a snack popular in the Indian state of Gujarat, is made from fermented batter made from chickpeas. The dish can take a while to cook. You can make instant dhokla in the microwave with similar ingredients. The instant dhokla will not taste exactly the same, but it allows you to enjoy the snack quickly. Dhokla recipes vary according to personal tastes, and ingredients are often added or substituted to suit one's taste.


Instructions


1. Spray a 4-cup microwave-safe bowl with non-stick spray.


2. Combine 1/2 cup chickpea flour, 1 tbsp semolina, 1/4 tsp citric acid crystals, 2 tsp sugar, 1 tsp minced garlic and 1 minced chili pepper together in a separate bowl. Stir to combine the ingredients.


3. Add 1/2 cup of water to the bowl of ingredients. Stir to mix the water with the ingredients. Pour the mixture into the microwave-safe bowl.


4. Combine 3/4 tsp of baking powder and 1/4 tsp of citric acid in a separate bowl. Sprinkle this over the batter, and then sprinkle 1 tbsp of water over the ingredients. Bubbles will begin to form on the batter.


5. Microwave the batter for two minutes until the batter does not look wet. Allow the bowl to sit for two minutes.


6. Turn the bowl over onto a plate to remove the dhokla.


7. Pour 1 tbsp of oil into a skillet and bring to high heat.


8. Add 1 tsp of mustard seeds, 1 tsp cumin seeds and 1 tbsp sesame seeds. Heat the ingredients for one minute, and then remove the skillet from the stove top.


9. Add 2 tbsp of minced cilantro to the skillet. Pour the mixture over the dhokla. Cut the dhokla into wedges.
