Bbq Duck Breasts

BBQ duck breast has a strong flavor.

Duck breast is composed of oily dark meat, similar in flavor to the dark meat of a chicken thigh. The breast is the largest cut of meat taken from a duck and is readily available from most butchers. There are several variations of duck breast recipes; barbecuing takes advantage of the meat's natural oils. The oils crisp the exterior of the duck breast, sealing the juices and flavor of the seasoned meat within. Allow 10 hours of marinating time before you plan to BBQ duck breasts.

Instructions

1. Combine the Worcestershire sauce, olive oil, hot sauce, garlic and pepper in a large bowl. Stir the marinade with a wooden spoon to blend.

2. Place the duck breast halves into the marinade and cover the bowl with a sheet of plastic wrap. Refrigerate for 10 hours.

3. Coat a grill's grate in an even layer of cooking spray and set to medium-high heat. Leave to preheat for five minutes.

4. Remove the duck from the marinade and place directly onto the grill. Cook to your desired level of doneness. Approximately seven minutes per side will produce well-done meat.
