Instructions


1. The first step in cooking cherry glazed chicken with this recipe is in a plastic bag combine flour, salt, and pepper.


2. The next step to making cherry glazed chicken with this recipe is to add the chicken in the bag and shake to coat.


3. Then, in a large skillet cook chicken in hot oil over medium heat about 8 minutes or until lightly browned, turning once. Using a slotted spoon, remove chicken from skillet; set aside.


4. In the same skillet cook onion in drippings over medium heat until tender, not brown (add more oil, if necessary).


5. Carefully stir ? cup of the apple juice, the dried cherries, cherry preserves, and chopped apple into skillet.


6. Return chicken to skillet. Bring to boiling; reduce heat.








7. Cover and simmer for 5 minutes or until chicken is no longer pink. Use a slotted spoon to remove chicken to a serving platter. Keep warm.








8. Meanwhile, in a small mixing bowl combine the remaining apple juice, cornstarch, and cinnamon. Stir apple juice mixture into skillet.


9. Cook and stir until thickened and bubbly. Then, cook and stir for 2 minutes more.


10. To serve, spoon sauce over chicken. Sprinkle with walnuts. Serve with the rice or couscous.
