White Wine Vinegar In Potato Salad

Potato salad can be made in countless ways.








Potato salad makes a flavorful side dish for a variety of meals, especially for cookouts on a warm summer afternoon. A common traditional recipe consists primarily of potatoes, celery, onion, mayonnaise and mustard, although many people put a personal twist on it. The addition of white wine vinegar to a potato salad can give it a zesty kick, but also add a delicate fruity flavor.


Instructions


1. Rinse and cut 1 ½ lb. of yellow or red potatoes into quarters. Add the potatoes to a pot full of lightly salted water and put it on the stove at high heat.








2. Boil the potatoes for 15 minutes. In the meantime, chop ¼ cup of onion and a stalk of celery. Other vegetables can be used as well, such as green beans or grated carrots.


3. Strain the potatoes after 15 minutes and transfer them to a large mixing bowl, along with the other vegetables of your choosing.


4. Mix 3 tbsp. white wine, 2 tbsp. white wine vinegar, 2 tbsp. brown mustard, 2 tbsp. extra virgin olive oil and 1 tbsp. fresh dill in a separate bowl. Whisk the ingredients until thoroughly combined. Season the mixture with salt and pepper to taste.


5. Pour the dressing mixture over the vegetables. Toss the vegetables until thoroughly coated with the dressing. Allow the potatoes to cool before serving the salad.
