Broccoli Waldorf Salad







Serve a waldorf salad over a bed of fresh lettuce.


Waldorf salads are colorful due to the variety of ingredients used to create them. The salads traditionally include fresh apples, walnuts and celery. However, recipes for Waldorf salads vary and sometimes include pecans. The salad then is topped with a mayonnaise-based salad dressing. The salad combines sweet and tangy fruit with crunchy vegetables. Serve the salad as a dessert, light lunch or with a meal to enjoy the burst of flavors.








Instructions


1. Remove the core from the apple. Cut the apple into quarters and then cut it into small cubes.


2. Remove the stalk from a head of broccoli. Cut the stalk high enough so that the florets fall off. Cut the large broccoli florets in half. Cut each half into quarters.


3. Place pecan halves into a sealed plastic bag. Smash the pecans with a mallet to break them into small pieces.


4. Chop the celery stalks into small 1/2 inch slices.


5. Combine the chopped apples, broccoli florets, pecans, celery and 1/2 cup of raisins into a large bowl.


6. Add 1 cup of mayonnaise, 1/2 cup of sugar, 1 tbsp. white vinegar and 1/4 tsp. of celery seed to a separate bowl. Combine the ingredients and drizzle over the prepared salad mixture. Chill the salad in the refrigerator.
