Keep Feta Fresh

Exotic and tangy, feta cheese does not act or taste like more common cheeses. Feta cheese comes packaged in brine or milk to preserve its freshness. The sharp, salty flavor of feta increases as the cheese dries. To preserve the cheese from becoming overly salty and covered with mold, you need to keep it immersed in a liquid similar to that in its original packaging. The bath mellows the flavor of the cheese and keeps bacteria at bay. Add the distinctive flavor of the Greek cheese to your dishes for a change of pace.


Instructions


1. Place the feta cheese into a glass jar.








2. Combine one gallon of water with 8 cups kosher salt.


3. Pour the water and salt mixture (brine) over the cheese to completely cover it in the jar.


4. Alternatively, fill the jar to a half-inch below the top with olive oil over the cheese.


5. Store the brine- or oil-covered cheese in the refrigerator for up to three months.


6. Another alternative: Wrap dry, aged feta cheese with parchment paper.








7. Cover the parchment with plastic wrap and refrigerate for up to three months.
