Make Tiramisu Cheesecake







This extra rich cheesecake is a delicious substitute to the Italian classic Tiramisu. With just a hint of coffee and rum it is an incredible end to any dinner. Read on to learn make Tiramisu cheesecake.








Instructions


1. Preheat oven to 350 F. In small bowl, combine cookie crumbs and melted butter. Press into bottom of pan. Place cut ladyfingers around sides of pan, with uncut sides facing out and rounded ends up.


2. In a small measuring jar, dissolve coffee crystals in the rum or rum flavoring. In a medium mixing bowl, beat cream cheese, mascarpone cheese and sour cream together until smooth. Slowly add sugar, cornstarch and vanilla. Add eggs all at once, beating until just combined. Stir in coffee/rum mixture and pour into pan.


3. Place pan in shallow baking dish. Bake for 45 to 50 minutes or until center of cheesecake is set. Remove from oven and let cool at least 15 minutes.


4. Run knife around edges of pan, loosening lady fingers from sides. Cool for additional 30 minutes before removing pan. Cover and chill at least four hours. Before serving, sprinkle plates with mixture of equal parts cocoa and powdered sugar. Lightly sift powdered sugar over lady finger crust.
