Cook Omurice

Omurice is a Japanese rice omelet that can be prepared in different ways. It can be fried rice wrapped inside an egg omelet or an omelet stuffed with pieces of chicken, stir-fried veggies and rice. No matter what's inside, omurice is always topped with ketchup in different designs and swirls.

Instructions

1. Dice the chicken, green pepper, mushrooms and onion. Heat some vegetable oil in a frying pan and saute the chicken alone. Then add the onion, mushrooms, green pepper and saute them together with the chicken.

2. Add the steamed rice to the frying pan and mix well. Sprinkle with salt and pepper to taste.

3. Turn off the heat. Add the 4 tablespoons of ketchup and mix everything together. You'll need extra ketchup when finished, but that can come straight from the bottle.

4. Heat the vegetable oil in a second frying pan. Wisk 1 egg in a bowl and pour it into the frying pan. Spread it out to make a large, thin, round omelet.

5. Put the chicken and rice mix in the middle of the omelet and fold the top and bottom sides over, as you would when making a turnover. Cover the frying pan with a serving plate and flip the pan upside down to place the omurice on the plate properly.

6. Repeat Steps 1 through 5 three times to make 4 plates of omurice. Put some ketchup on top of each completed omelet. Some people put on smiles, others sign their names or initials or draw nonsensical patterns.
