Freeze Mashed Avocados







Keep your avocados fresh longer by freezing them.


Slice it, dice it, mash it up into a dip -- no matter how you serve it, avocados provide a creamy and nourishing complement to Latin American and Southwestern dishes. Loaded with vitamin E, a mashed-up avocado can soothe the skin as a facial mask as well. If you've mashed up too many avocados for a face mask or guacamole recipe, freeze some of the extra to use later. Keep your avocados protected by properly packaging them before you freeze.


Instructions


1. Place the mashed avocado in a food processor. Blend until smooth. Pour the puree into a mixing bowl.


2. Add 1 tbsp. of lemon juice or 1/8 tsp. of ascorbic acid to 2 cups of avocado puree. Mix together thoroughly. This will prevent the avocado from oxidizing and darkening as it freezes.








3. Place the mixture into plastic freezer bags. Squeeze out all the air and seal. Frozen avocados will stay fresh up to 5 months.


4. Defrost the avocado by placing the wrapped package in a refrigerator for 24 hours or until thawed.
