Make Chocolate Mousse With Tofu

Chocolate mousse is a notoriously rich dessert, but who knew it could also be good for you? Tofu makes for a healthy mousse recipe that requires little time to make and no time to set. Just melt, blend and serve. This dessert is very rich, so serve in small portions, or use it as a dip or topping. Preparation time: 15 minutes. Yield: 2 cups.


Instructions


1. Drain tofu and cut into 1-inch cubes. Transfer to blender.


2. Melt chocolate chips in double boiler or microwave. For vegan mousse, use dark chocolate or carob chips. (See "Melt Chocolate Chips" under Related eHows.)


3. Pour melted chocolate into blender over tofu. Add honey, vanilla and pinch of salt.


4. Blend all ingredients on the "Hi" speed until creamy, occasionally scraping sides of blender down.








5. Serve the mousse immediately or cover and chill for later. Serve in small portions, as this mousse is exceptionally rich: start with 1/4 to 1/2 cup servings. Store the mousse in your refrigerator for up to a week.
