Polish cream cheese Kolacky cookies are very popular around the holidays in the United States. Choose any flavor of fruit jam or preserves, or make a big tray with a festive assortment of strawberry, blueberry, peach, grape and pineapple Kolacky. You can quickly and easily make these Kolacky cookies with ingredients you most likely already have in your kitchen. This recipe makes about three dozen cookies, but you'll probably want to double or even triple this recipe, because these yummy little morsels will disappear quickly. Serve them warm with tall glasses of very cold milk.
Instructions
1. Soften and cream 3 oz. of cream cheese, ½ cup of butter and 1 tsp. of vanilla or almond extract together in a large mixing bowl until the mixture is smooth.
2. Work in 1 cup of flour gradually to form the dough. Roll the dough into a ball. Cover it with a damp towel and refrigerate it for about a half an hour.
3. Preheat the oven to 375 degrees F. Roll the dough ball out on a floured board to ¼ inch thick, and cut out 2-inch circles with the rim of a drinking glass or a cookie cutter.
4. Drop ¼ tsp. of fruit jam or preserves into the center of each cookie. Fold two opposite edges toward the middle and pinch them together firmly.
5. Bake the Kolacky cookies on ungreased cookie sheets about 10 minutes, or until they are a pleasant golden color. Sprinkle them with powdered sugar and serve them warm.
