Serve Super Lasagna And Caesar Salad

If you want to serve a special dinner combination, start with a Caesar salad and follow with lasagna for the main course. Lasagna is equally at home at formal or informal gatherings. These recipes serve 12, but you can reduce the ratio of ingredients for smaller meals.


Instructions


Make the Caesar Salad


1. Chill the bowl and the whisk first. This helps the dressing hold together.


2. Whisk together the lemon juice, white vinegar, 2 tsp. Worcester sauce, crushed garlic, eggs, minced anchovy and pepper in the chilled bowl. Add olive oil. Whisk all the ingredients together in the bowl.


3. Add the lettuce and toss until dressing coats all of the lettuce. For best results, serve this salad immediately after tossing.


Make Lasagna Sauce


4. Preheat the oven to 350 degrees to Fahrenheit. Heat the oil over moderately high heat in heavy, 5 to 6 quart pot.


5. Saute the onion until it's golden, stirring often. Add the garlic and saute for 1 more minute.


6. Add the sausage, breaking up the large pieces. Keep stirring as the sausage browns, about 5 minutes.


7. Chop tomatoes and add them to the pot along with their juice. Add salt and pepper to taste. Simmer the sauce for 30 minutes, until it's thick and the flavors have developed.


8. Remove from the heat.








Make the Cheese Mixture


9. Beat the egg lightly. Stir together beaten egg, ricotta, mozzarella and Parmesan in a medium bowl.


10. Add salt, pepper and nutmeg.


11. Fold in the parsley.


Assemble and Bake the Lasagna








12. Boil lasagna noodle according to package instructions. Drain into a medium bowl.


13. Pour 2 cups of sauce into your baking dish. Layer in half the lasagna noodles, half the remaining sauce and all of the cheese mixture. Top with the remaining lasagna, sauce and additional mozzarella.


14. Cover and bake for 45 minutes.


15. Uncover and bake for 15 more minutes.
