Make Double Baked Potatoes

Top double-baked potatoes with cheese and broccoli.








Double-baked potatoes combine the versatility of a baked potato with the creaminess of mashed potatoes. Start with large potatoes and add your favorite toppings to make a meal, or use medium-sized potatoes and pair with steak and vegetables for a special dinner. Twice-baked potatoes can also be prepared ahead and frozen for later use.


Instructions


1. Preheat the oven to 375 F.








2. Wash the potatoes, scrubbing lightly with a vegetable brush or sponge so you don't remove the skin. Pierce the skin of each potato with a fork in several places.


3. Place the potatoes on a baking sheet and cook until done, about 45 minutes.


4. Cut the potatoes horizontally and scoop the insides into a bowl, taking care to avoid damaging the skins. Set the skins aside.


5. Mash the potatoes in the bowl and blend in sour cream, about 1 cup for every 3 potatoes. Also add salt and pepper to taste. Use a masher or ricer until the mixture is smooth.


6. Scoop the mashed potatoes into the potato skins. Add your toppings, such as cheese, bacon, green onion and broccoli. Each potato can have different toppings to suit your tastes.


7. Return the potatoes to the oven for a few minutes before serving to melt the cheese and heat the filling.
