Cook Perfect Liver

Use a skillet to cook liver.


Although the thought of eating liver for dinner causes many to scrunch their noses, some have overcome their initial distaste, learning to enjoy the same dish that caused them fear during childhood. Cooking liver on the stove top provides a quick start-to-finish meal that packs high amounts of protein and iron. Add onions or other sauces to spice up the dish and serve immediately.


Instructions


1. Purchase liver, sliced to measure 1/2-inch thick. Rinse the meat under cool water and pat dry with a paper towel.








2. Place 2 tbsp. of butter in a skillet and melt over medium-low heat.








3. Place 2 cups of flour on a plate. Add salt and pepper and mix well, then roll a liver slice in the flour mixture. Add the liver to the skillet and turn the heat to medium-high. Cook until browned on the bottom. Turn and repeat on the other side. Total cooking time should be approximately 10 minutes.


4. Test the meat for doneness, cutting the thick part with a knife. If the meat is pink, continue cooking for a short time longer. Repeat for all liver slices.
