Make Authentic Mexican Guacamole







Guacamole is a staple whenever people eat Mexican food, although cooks take liberties with tradition by altering the original recipe. As a result, many people have never tasted authentic Mexican guacamole, instead eating it mixed with sour cream or mayonnaise. This is a shame because the original dish is delicious. Get back to basics and learn to make authentic Mexican guacamole with these instructions.


Instructions


1. Select ripe Hass avocadoes. These avocadoes are small and black in color. When ripe they are soft and give when pressed slightly.








2. Cut the avocadoes open and take out the seed. Scoop the avocado meat with a spoon into a bowl and mash against the sides of the bowl with a fork. Leave the avocado pieces a little chunky for authentic Mexican style.


3. Sprinkle on fresh lime juice. This will prevent the avocadoes from browning before serving. Mix these together well.


4. Finely chop up some cilantro, tomatoes and onions. Stir these ingredients into the mashed avocadoes.


5. Add in more lime juice to taste and then sprinkle in a little salt. Stir this lightly.


6. If desired, seed one jalapeno pepper or a Serrano chile and chop finely. Stir into the guacamole.


7. Dish up the authentic Mexican guacamole with homemade tortilla chips or top off any Mexican meal favorite.


8. Serve immediately. Even though lime juice is used to prevent browning, guacamole eventually will change color anyway and although it still tastes good, it just doesn't look tasty.
