Make Chicken Broccoli Casserole

Use fresh instead of frozen broccoli if you're watching your sodium intake.








Make chicken broccoli casserole the next time you need a covered dish for a potluck dinner. This easy-to-prepare recipe contains protein, dairy and fiber in one delicious dish. You also can prepare a chicken broccoli casserole, freeze it and reheat it for quick weeknight meal.


Instructions


1. Preheat your oven to 350 degrees Fahrenheit.


2. Cut the chicken breasts into chunks. Cover the bottom of a pan with nonstick cooking spray or a little extra virgin olive oil. Brown the chicken until the internal temperature reaches 170 degrees. Set aside.


3. Mix the chicken and a bag of frozen broccoli in a casserole dish. Sprinkle the mixture with shredded mozzarella.


4. Combine the cream of chicken soup and milk in a bowl. Mix well. Pour the soup mixture over the chicken and broccoli in your casserole dish. Sprinkle it with salt and pepper to taste.


5. Prepare the stuffing mix according to the product's directions. Spoon the stuffing on top of your chicken and broccoli, covering it completely. Bake for 30 to 45 minutes.
