Make Easy Enchiladas

There are plenty of delicious recipes from south of the border that are pretty easy to make. Enchiladas are one of them. So if you want to make an easy Mexican dish for dinner, get you tortillas ready and stuff them with some tasty ingredients and enjoy your meal.


Instructions








1. Preheat the oven to 350 degrees F.








2. Chop onions and garlic. A small or medium size onion will suffice and use as much garlic as you prefer, just don't go overboard. One clove is enough usually.


3. Take a large frying pan and add 2 to 3 tbsp. of oil in it. Take out the number of tortillas you are going to need and very quickly put them in the pan one by one for a few seconds so they heat up.


4. Quickly Saute the garlic and onions, then turn off the heat and add about a cup of your favorite salsa. If you like spicy food you can chop up some jalapenos and add to the mix.


5. Combine 3 Tbsp. of tomato paste with 1 Cup of water and add it to the pan.


6. Pull out a casserole pan and grease it up with either oil or butter so the enchiladas wont stick to the pan. Now you are ready to stuff your enchiladas. Sprinkle the cheese of your choice on the tortilla and add chicken, beef or pork and then roll up the tortilla and place it in the casserole pan.


7. After all the tortillas are rolled up and placed in the casserole pan, cover them with the salsa mix from the frying pan. Cover all of them with a layer of cheese and put them in the oven for 10 minutes or whenever they look ready. If you like you can put some sour cream on top and then they are ready to serve!
