As society becomes more health conscious, vegan diet restrictions are becoming more popular. One of the easiest vegan dishes to prepare is pasta with a simple sauce. Next time you make a pasta sauce, bypass the butter, milk and cheese and try one of these easy, delicious vegan spaghetti sauces that showcase vegetables rather than animal byproducts.
Vegan Tomato Sauce
1 tbsp. olive oil
½ onion, chopped
2 garlic cloves, minced
6 tomatoes, chopped to desired size
salt and pepper to taste
1/8 cup fresh basil, chopped
1/8 cup fresh oregano chopped
Heat oil in a medium saucepan over medium-high heat. Add onions and garlic and saut for 5 minutes or until onions are tender. Stir in tomatoes, salt, pepper, basil and oregano. Reduce heat and simmer for 10 minutes.
Vegan Avocado Sauce
1 tbsp. olive oil
3 garlic cloves, minced
1 avocado, cubed
1 cup soy milk
salt and pepper, to taste
Heat a small saucepan over medium heat. Add oil and garlic; saut for 4 minutes. Add avocado and milk and stir until you reach a creamy consistency. Reduce heat and simmer for 4 minutes. Remove from heat. Add salt and pepper to taste. Serve over prepared pasta.
Simple Vegan Garlic Sauce
2 tbsp. olive oil
2 cloves garlic, minced
1/2 cup water or vegetable stock
1 tbsp. chopped parsley
salt and pepper, to taste
Heat a small saucepan over medium heat. Add oil and garlic; saut for 4 minutes. Add water or vegetable stock, stir and remove from heat. Sprinkle with parsley, salt and pepper. Serve over prepared pasta.
Vegan Alfredo Sauce
1/4 cup Earth Balance or other vegan butter
1 garlic clove, minced
3/4 cup soy creamer
1 cup Veggie Slices shredded Parmesan Cheese
Heat a small saucepan over medium heat. Add butter and garlic. Saute for 4 minutes. Stir in creamer and slowly whisk in cheese until it reaches a creamy texture. Serve over prepared pasta.
