Store Red Jewel Sweet Potatoes

Red Jewel is one the most-cultivated varietals of sweet potatoes in the United States, second to Beauregard. It has a rose-colored, semi-thick skin, a sugary, moist interior and bright-orange flesh, similar to a yam. Follow the standard guidelines for sweet potatoes when storing Red Jewels, which entails keeping them in a cool, dry place.


Instructions


1. Cure newly harvested Red Jewel sweet potatoes with cut or damaged skins in a warm, humid area for four to seven days. Curing sweet potatoes cut during processing or harvesting in a warm, humid area prompts sugar production through enzyme action, which prevents bacterial growth. The temperature should range between 80 to 85 degrees Fahrenheit with an ambient humidity between 80 and 90 percent. If these conditions are not achievable, increase the curing time by two days for every 5-degree decrease in temperature.


2. Store cured sweet potatoes in a cool, dry place uncovered. Ideally the temperature should measure between 45 and 50 degrees Fahrenheit. If these conditions cannot be met, store them above 35 degrees Fahrenheit uncovered in a dark place.


3. Store cooked Red Jewel sweet potatoes in the refrigerator up to three to four days for best results.
