Melt Chocolate Chips Smoothly For Dipping

Chocolate dipping sauce complements the flavor of fruits.








Chocolate dipping sauce complements the flavor of strawberries and other fruits. It also adds a flavorful and decorative touch when used to coat candies, cookies or pretzels. Though special melting chocolate is available, sweet or semi-sweet chocolate chips make a suitable substitution. Melting the chocolate so it remains smooth and glossy ensures an attractive coating on dipped items.


Instructions


1. Fill a pot with two inches of water. Place a double-boiler insert into the pot so it sits above the water.


2. Heat the pot at medium until the water begins to simmer. Pour the chocolate chips into the double-boiler insert.


3. Add the shortening or butter to keep the chocolate smooth and glossy once it melts.


4. Stir constantly as the chocolate melts. Failure to stir causes the chocolate on the bottom of the double boiler to scorch, resulting in lumps.


5. Remove the chocolate from the heat as soon as the chips are completely melted and after the butter or shortening is fully incorporated in the sauce. Use for dipping immediately.
