Warm Arugula And Radicchio Salad

Radicchio is a firm red lettuce.


Warm arugula and radicchio salad is a quick side dish that is simple enough for new chefs to make. Radicchio is a firm, red lettuce and a member of the chicory family. Arugula is a delicate, green lettuce native to the Mediterranean region.


Ingredients


Cored, clean and drain the radicchio and arugula. The radicchio is tougher, so cut into bite-size pieces. A quick chopping of the arugula is sufficient for the salad.








Preparation








Warm the greens in a skillet seasoned with about 1 tbsp. of extra-virgin olive oil for every 2 cups of lettuce. Add the radicchio first because it takes longer to cook. Cook the greens, stirring constantly, at a high temperature for 1 to 2 minutes, or until the greens start to wilt.


Dressings


Dressings for this salad should be light and simple. A balsamic vinaigrette made with equal parts of olive oil and balsamic vinegar is a good choice. You can use a purchased Italian vinaigrette as well.


Additions


Walnuts, warm goat cheese, figs and pine nuts are suitable toppings for this salad. In addition, you can add herbs, like thyme and oregano or chopped garlic during the wilting process.
