If you've traveled through Louisiana and seen signs for boudin, hopefully you've taken the time to eat this wonderful Cajun treat. Boudin is sausage stuffed with spicy pork, onions, rice and herbs. Although it originated as a necessity, the rice was added to make the pork go further, it has become a popular Cajun snack. Even if you aren't a Louisiana native, you can enjoy this delicious pork sausage.
Instructions
1. Travel to Louisiana. Boudin was originally made by the Cajuns in Louisiana. Authentic boudin can still only be found in the pelican state.
2. Stop at a grocery store, meat market or convenience store. These are the best places to pick up fresh, homemade boudin.
3. Bite into the sausage link. Boudin is usually eaten without utensils. Gently pull the meat out of the sausage casing with your teeth and fingers. You will want to have several napkins ready to catch the drips.
4. Slice the boudin open with a knife. Then pull the meat out with a fork. If you are a fastidious person, you may use your silverware to eat boudin.
5. Add condiments. Some locals enjoy boudin with a little something extra: a bit of creole mustard, cane syrup, a French roll or a few crackers.
6. Wash the boudin down with an ice cold beer. The refreshing taste of the beer sets off the boudin's spicy heat.
