Make Cuban Pork Roast

Cuban food usually reflects life on that tropical island. Cuban food, like its culture, is rich with Spanish influence, bright colors and tropical flavors. When preparing this recipe for Cuban pork roast, you will learn to inject the roast evenly to allow the citrus flavor to absorb throughout the meat.


Instructions


1. Combine the orange juice and lime juice in a small bowl. Add the oregano to the juice and mix well.


2. Use a knife to make slits in various areas of the roast. The slits should be the width of the knife and no more than 1/4 inch deep. To create the most intense flavor, four slits should be made on all sides of the roast. Insert a garlic sliver into each slit.








3. Fill the meat injector with the juice mixture. Injection sites should be near to the locations of the garlic slivers. Set aside a small amount of juice to baste the roast while baking.








4. Season the roast with salt and pepper.


5. Heat oven to 350 degrees. Cover the roast and bake for at least 40 minutes or until done. Marinate with a basting brush every 15 minutes in an effort to prevent drying.
