You can use real ramen noodles as a side dish, as part of many recipes, or in stir-fry main courses. Real ramen noodles are made from scratch. The flavor is very rich and savory. You will probably notice your family coming into the kitchen, when the ramen noodles hit the deep-fryer to find out what that delicious smell is. Making real ramen noodles is a time consuming process, but well worth the effort for the extra flavor and great texture.
Instructions
1. Put all-purpose flour and salt into the mixing bowl. Use spoon to create a well in the center of the flour. Crack eggs into flour. Put 1 tablespoon of water in flour. Slowly combine flour into the center of the well until ingredients are thoroughly mixed.
2. Cover bowl with a clean dish cloth. Allow ramen noodle dough to rest for half an hour.
3. Get out your pasta machine. Secure the angel hair attachment to pasta machine. Remove ramen noodle dough from bowl (from step 2). Roll dough through pasta machine according to manufacturer's instructions.
4. Twirl ramen noodles into the shape of a nest. Repeat until all the dough is used. Set nests on parchment paper. Allow to air dry for several hours.
5. Fill deep fryer with vegetable cooking oil. Allow to heat to high temperature. Drop one nest into deep fryer. Deep-fry for 3 minutes. Flip nest. Deep-fry for 3 more minutes. Remove deep-fried ramen noodle nest from deep fryer with ladle or slotted spoon. Repeat with each nest.
6. Set deep-fried ramen noodle nest on paper towel. Allow to drain. Cool for approximately 20 minutes.
7. Fill cooking pot with water. Add a pinch of sea salt. Turn on heat source to high. Bring water to a rolling boil. Place cooled nest (from step 6) into boiling water. Boil the real ramen noodles until they are tender. Drain well and serve. Repeat with each nest (
