Make Funeral Sandwiches

Chopped bologna in a spread makes a mild sandwich for serving at a funeral.


Funeral sandwiches refers to finger sandwiches served at funeral receptions. Ingredients vary depending on the cook and the region. Most funeral food is mellow in flavor and appeals to a wide range of people, as noted by "The Oxford Companion to Food and Drink." Funeral sandwiches are not the time to serve an exotic entree. A common sandwich, called a Protestant Funeral Sandwich, is similar to a cross between a chicken salad sandwich and a bologna and cheese sandwich.








Instructions


1. Pulse the meat in a food processor several times to chop it coarsely.


2. Add the hard cooked eggs, and pulse the food processor again to chop the eggs.


3. Stir the mayonnaise and sweet pickle relish into the meat and eggs.


4. Spread 2 tbsp. of the bologna spread on each of five slices of bread.


5. Place a slice of American cheese onto five other slices of bread.








6. Top the spread-covered bread with a piece of bread with a cheese slice to make a whole sandwich.


7. Cut the sandwiches into triangles, halves, quarters or strips as desired with a sharp knife.
