A cheese steak from Geno's in Philadelphia.
Chicago has its hot dogs, Wisconsin has its cheese, and Philadelphia has its cheese steaks. The basic Philly cheese steak is a stack of sliced steak smothered in cheese, onions and peppers served on a long bun. However, there are famous Philly restaurants that argue constantly about which one makes "the" most authentic sandwich. A home version probably won't win any votes from that crowd, but it can do for a quick lunch or dinner.
Instructions
1. Saute one chopped sweet onion in olive oil, 2 tbsp. of butter and crushed, black pepper. Cook in a large pan on high heat until the onions caramelize.
2. Add the slices of beef one at a time into the pan. Use a spatula to cut the beef into small pieces as it cooks.
3. Add another dash of black pepper and the green peppers. Work the steak into smaller bits and cook until fully done and mixed well with the onions and peppers.
4. Lower the heat to medium. Use the spatula to form the meat into a long mound. Place 1 or 2 slices of cheese over the still cooking meat. When the cheese starts to melt, use the spatula to lift the meat out of the pan and place it a hero or hoagie roll.
