Filo Quiche

Mini quiches made with filo dough make excellent party appetizers.


Filo dough is a flaky pastry dough used in Greek dishes such as spanakopita and baklava. It can be used with both sweet and savory foods and makes an excellent crust for quiche.


Filo Dough


Filo dough can be purchased in the freezer section at most grocery stores. It comes in very thin sheets that have a tendency to dry out, so keep it's important to keep it covered while working with it.


Quiche Assembly








Use eight to ten layers of filo in a pie pan for a quiche crust. Brush each layer of filo with melted butter and then pre-bake the crust for about five minutes before adding the filling. After the filling has been added, bake as usual.








Mini Quiche with Filo


Use a cookie cutter, glass, or biscuit cutter to make small circles of filo dough. Place 3 to 4 layers of dough in muffin tins, brushing each layer with melted butter. Pre-bake the dough for 5 minutes before adding the filling.
