Make Weight Watchers Soup My Quick And Easy Version

When you go to your first Weight Watchers meeting,chances are one of the first Weight Watchers recipes given to you will be for the Weight Watchers soup. This vegetable soup is not only healthy but it is just 0 points! Of course you can add a bit of cooked chicken or pasta to it to make it a filling meal, just adjust the point count accordingly.


Another nice thing about 0 point Weight Watchers soup is that you can vary the vegetables and spices according to your personal taste. You can make a big pot and freeze in individual portion sizes. Serve it with a sandwich for a quick, diet friendly lunch or have a small bowl to help fill you up before dinner so that you will naturally eat less.


This recipe has been personalized with my own vegetable preferences. I also use coleslaw mix to keep prep work to a minimum.








Instructions


1. Spray large pan with non stick cooking spray. Saute chopped onion for about 5 minutes.


2. Add the vegetable broth, diced tomatoes, remaining vegetables and Italian seasoning.


If using cabbage instead of coleslaw mix, clean and core a small head of cabbage; cut in half and slice thin.








3. Allow soup to simmer about 10 to 15 minutes or until vegetables are tender. Test the soup and add a little salt and pepper if needed.


4. Ladle Weight Watchers soup into bowl. If desired sprinkle on a little grated Parmesan cheese. Adjust points as needed.
