Extract Bing Cherry Juice

The juice of Bing cherries can be easily extracted at home.

In addition to being appreciated for their sweet flavor, the antioxidant and anti-inflammatory properties of Bing cherries have given them a reputation for being healthful. Bing cherry supplements made from concentrated cherry extract are sometimes found for sale in health stores.

Bing cherry juice, although less common than other juices, is sometimes sold in grocery stores. Because pure cherry juice can sometimes be hard to find, some choose to extract the juice from fresh cherries at home. The juice is extracted from the crushed fruit of the cherry, much the same as grape juice is extracted from grapes.

Instructions

1. Wash the cherries by rinsing them thoroughly under cool running water. Remove the stems and pits and discard.

2. Add the cherries to a clean bucket or dishpan. Crush the cherries, using your hands or a potato masher.

3. Pour the crushed cherries along with any liquid that was produced during the crushing process into an appropriately sized pot. Place on a stove set to low/medium heat.

4. Stir the cherries constantly until they become liquid and begin to simmer. Remove the cherry juice from the heat.

5. Put a clean pot on your work surface. Slowly pour the cherry juice through a cheesecloth bag into the pot to remove any solids from the cherry juice.

6. Pour the strained cherry juice into clean glass jars. Tighten the lids as much as possible. Store the cherry juice in the refrigerator until you are ready to use it.

7. You can store cherry juice in glass jars for a longer time if you heat seal the jars. To do this, pour the strained cherry juice into clean canning jars, then add clean lids and tighten. Boil the jars in water for five minutes to ensure they are completely sealed.

Although Bing is a sweet variety of cherry, sugar can be added to the cherry juice. After the juice has been strained, add one cup sugar per one gallon juice. Reheat the juice to incorporate the sugar, stirring constantly until it comes to a simmer. Pour the juice into clean glass jars and store in the refrigerator or heat process them for longer storage.
