Make Chicken Salad With Sour Cream


The term chicken salad refers to any salad that contains chicken as the primary ingredient. In Asia and Europe, chicken salad traditionally contains vegetables, greens, pasta or rice. In the United States, chicken salad is most commonly made of chopped chicken combined with mayonnaise to bind and a few vegetables. This recipe yields four servings of chicken salad made with sour cream as the primary binding agent.


Instructions


1. Cut the chicken breast halves into small, bite-sized pieces. Add three cups of water and the chicken to a two quart saucepan. Bring to a boil over medium-high heat, and then reduce the heat to medium.


2. Simmer the chicken for about 20 minutes, or until tender and cooked through. Remove the chicken from the saucepan using a slotted spoon.


3. Combine the diced chicken, celery, grapes and onions in a small mixing bowl. Mix the yogurt, sour cream and dill in a separate mixing bowl.


4. Combine the contents of the two bowls. Toss lightly to ensure the chicken and other ingredients are thoroughly coated with the sour cream dressing mixture.


5. Divide the chicken salad into four separate portions. Spread each portion over one slice of bread and top with lettuce leaves. Place another slice of bread on top to form sandwiches. Optionally, you may serve each portion over a bed of lettuce leaves.
