However, many casseroles require creamy soups, potatoes or pasta as a main ingredient, which make them off limits for low carb dieters. Make a Low Carb Casserole
1. Preheat the oven to 350 degrees Fahrenheit.
2. Cut the chicken into bite-sized chunks. This will cut down on cooking time and make the casserole easier to serve and save if you have leftovers.
3. Brown the chicken. Use a small amount of butter and brown the chicken until it is almost cooked. The centers should still be pink. It is not safe to eat the chicken at this stage.
4. Spray the casserole dish with non-stick cooking spray. This will prevent the chicken pieces from sticking to the bottom of the casserole dish.
5. Spread the pieces of chicken out over the bottom of the casserole dish. They should cover the bottom of the dish evenly. Make sure that there are no "holes" where the casserole will not have any chicken.
6. Saute the onions, celery and mushrooms. When the vegetables are tender, they are ready to be added to the casserole.
7. Mix the cooked vegetables, salt, pepper, cream, mayonnaise, green beans and cheese together. Use the large mixing bowl and stir them until they form a creamy mixture.
8. Pour the mixture over the chicken pieces. Spread it evenly so that all of the chicken is covered.
9. Cover the dish with aluminum foil. Make sure that you do not leave any parts uncovered or the casserole will dry out while it is baking.
10. Bake for 30-40 minutes. If you wish, you can uncover it for the last ten minutes in order to brown the top of the casserole.
