Create Your Own Wing Sauce
Many establishments have a house or signature sauce for their chicken wings. You might have encountered so many personal and private recipes that you might begin to wonder how difficult it really is to make create your own wing sauce. Fortunately, for the aspiring sauce slinger, with the basics and a few personal touches, you too can make your own wing sauce.

Buffalo Sauce
1. Melt the butter and
2. Tweak the recipe ingredients ratio. Simply by changing the precise formulation, you can create a different flavor. Add more brown sugar to make a sweeter sauce, or increase the spices for a more savory sauce. Reduce or increase the pepper sauce and chili powders to increase or decrease spice heat.
3. Add new ingredients to put a personal spin on this traditional sauce. Consider alternate spice sources like jalapeño peppers or habenero peppers for a more potent heat. Try adding various regional spices like curry or Chinese Five-Spice powder to the wing sauce for something new. Add some of your favorite ingredients to small batches of wing sauce to test how it affects the overall flavor.

4. Heat oil in the saucepan and add the onions to sauté. Add tomato paste when the onions are clear and stir together. Add all additional ingredients into the saucepan and mix, heating it to boiling and allowing it to boil for between 10 and 15 minutes.
5. Alter ingredient ratios to strengthen or weaken other flavors. You may find the sauce to be too thin or thick for your purposes, which can be fixed by adding or reducing water to the recipe. Tomato can impart too rich a flavor to the sauce, which can be decreased by reducing the amount of tomato paste added.
6. Include some additional ingredients to make it special. Many sauces get additional tang from whiskey, bourbon or beer. Create a specialty barbecue sauce by adding ingredients like honey for honey barbecue sauce. Add common favorites like garlic or cilantro, testing in small batches to figure out the right ratio.
