Make Low Fat Spinach Pie


The Greek classic, spinach pie (or spanakopita), is a wonderful side dish. But it's also high in fat. Because the recipe involves phyllo dough, the recipe cannot be changed too much. But there are a few things a chef can do to make spinach pie with less fat. Usually, one serving of spinach pie will have more than 14 grams of fat and 240 calories. This recipe has only 9 grams of fat, and 180 calories. This recipe will be ready in about 40 minutes and makes 8 servings.


Instructions


Low Fat Spinach Pie


1. Heat oven to 350 degrees.


2. Use light cooking spray on bottom of a glass 9 x 13 baking dish. Set aside.


3. Place 10 ounces of frozen spinach in the microwave to cook.


4. Drain spinach and place in bowl.


5. Add three eggs.


6. Add a half cup of fat free cottage cheese. Small curd is best.


7. Use salt and pepper to season mixure. Set aside.


8. Melt light butter in microwave.








9. Open phyllo dough and place one layer on the bottom.


10. Sprinkle each layer of phyllo dough lightly with butter until you've used 10 layers.


11. Spoon spinach mixture on top of phyllo.


12. Cover with another sheet of phyllo. Gently sprinkle butter between each layer until you've used the rest of the phyllo dough. (About 10 sheets).


13. Cut into 8 pieces before placing in oven.


14. Place in oven for about 30 minutes.


15. When done, let cool and then serve.
