Recipes for pasta sauces are infinite. The home cook or restaurant chef can base a sauce on anything the fridge or pantry contains. Still, some traditional Italian pasta sauce recipes remain all-time favorites.
Tomato Sauce
The classic tomato sauce for pasta can be made quickly with canned tomatoes, chopped onion and garlic, fresh or dry basil and salt and pepper to taste. After browning the onions, add the rest of the ingredients and simmer for 15 to 30 minutes.
Pesto Genovese
The traditional basil and pine nuts pesto is an elegant pasta sauce for any season. Blend pine nuts, garlic, Parmesan cheese, olive oil and plenty of fresh basil leaves to form a paste.
Alfredo Sauce
The popular Alfredo sauce is easier to cook than it might seem. Simply warm up heavy cream with some butter and add a touch of nutmeg. Add some cheese and stir on a low fire until the sauce reaches the desired consistency.
Vodka Sauce
For a classy vodka sauce, brown garlic and onion in olive oil, add 1/2 cup of vodka and reduce. Pour crushed tomatoes and heavy cream into pan, add salt and pepper and cook briefly on a low flame.
Spaghetti Aglio e Olio
Garlic and olive oil spaghetti is quick and simple yet very savory. While your pasta is cooking, finely chop some garlic and add to a pan of olive oil. Add red pepper flakes and once pasta is ready add to the pan, mix and serve.
