Make Carne Asada Burritos
The carne asada in this recipe can be used in a lot of different ways. It's a versatile starting point for lots of Mexican dishes. This recipe makes four burritos.
Instructions
Preparing the Meat
1. Cut the limes in half crosswise and squeeze the juice into a glass bowl.
2. Cut the meat into lengths about 4 inches long. Place the meat in the bowl, making sure the juice covers a good amount of the meat's surface.
3. Let the meat marinate in the lime juice for a minimum of 1 hour and up to 4 hours. If possible, turn the meat every 20 minutes.
4. Remove the meat from the marinade and pat dry with paper towels. Liberally sprinkle the meat with the salt and pepper.
5. Heat the oil in a heavy-bottomed saute pan over medium-high heat. When the oil is quite hot, add the meat, without crowding the pan, one piece at a time.
6. Sear the meat for 1 to 2 minutes per side depending on your preference for doneness. One minute will give you rare; 2 minutes will give you medium.
7. Remove the meat from the pan and place on a plate lined with paper towels. Repeat with any remaining uncooked pieces.
8. Once the meat is cool enough to handle, place it on a cutting board.
9. Cut the meat across into thin strips. Cut across the strips so the meat comes out in small pieces.
10. Keep the meat on a plate in your oven at the lowest setting.
Making the Burritos
11. Heat a tortilla in the microwave for 20 seconds on high.
12. Place the tortilla on a large plate and put a few heaping tablespoons of the meat in a thick line on the edge closest to you. Add some salsa and cheese on top of the line of meat.
13. Starting with this edge, roll the tortilla over the meat mixture once. Fold the edges to the right and left of the meat mixture toward each other until they're snug against the roll of meat.
14. Continue to roll the tortilla until it becomes a tight cylinder. Repeat with remaining tortillas.
