The Bacon Cheddar Potato is a perfect combination of mouthwatering flavors. And if you use low-fat cheddar with low-fat, low sodium bacon, it isn't unhealthy. Of course you can just pile on the good stuff. Here's a quick and easy recipe for a Bacon Cheddar Potato. Add this to my Recipe Box.


Instructions


1. Wash and clean your potato. Use a vegetable brush to get rid of any dirt. Also remove any eyes that have formed on the potato skin.


2. Puncture your potato with a fork or knife in several places. If you don't, your potato will explode in the microwave.


3. Microwave your potato on high for 8 to 10 minutes. Your potato will be done when you can easily stick a fork or knife through the skin.


4. Slice your potato in half and scoop out the insides. Place the insides of the potato in a bowl.


5. Microwave a slice of bacon for 45 seconds on a paper towel.


6. Add your cheddar cheese to the potato.


7. Remove the bacon from the microwave, let it cool for a minute and then chop it into bacon bits.


8. Add the bacon to the potato and cheddar. Stir with a spoon until well mixed. Stuff the mixture into the skin of the potato.








9. Set your toaster oven to "toast" and cook the potato for five minutes or until the skin begins to crisp. Remove the potato, let cool for a minute and serve.
