Cook Lobster Mushrooms

Lobster is a sweet and tender meat that is delicious on its own, but can also be an impressive addition to other dishes. Lobster mushrooms combine the delicate lobster meat with a variety of seasonings and vegetables to create a flavorful stuffing for earthy mushrooms. Prepare these lobster mushrooms as an appetizer or hearty side dish to complement nearly any meal.


Instructions








1. Preheat oven to 350 degrees F.


2. Wash and dry the mushrooms. Remove the stems from the mushrooms. Leave the mushroom cap intact.


3. Chop the cooked lobster meat.


4. Chop celery, onion and red bell pepper into fine pieces.


5. Heat butter in a large skillet. Sauté the celery, onions and red bell pepper until the vegetables are tender-crisp.


6. Mix the chopped lobster meat and sauteed vegetables with the bread crumbs, mayonnaise, salt, pepper, Old Bay Seasoning and shredded Parmesan cheese in a mixing bowl.


7. Place the mushroom caps on a foil-lined baking sheet.


8. Fill each mushroom cap with a heaping spoonful of the lobster stuffing.


9. Top each mushroom with a sprinkling of shredded sharp cheddar cheese.


10. Bake the mushrooms uncovered for 20 minutes, or until lightly browned and bubbling.
