Make Sesame Balls Dim Sum







Sesame balls, a favorite in Chinese restaurants and bakeries, are light and fluffy, and sometimes have a small amount of filling in the center. According to Chinese tradition, eating sesame balls dim sum will cause your luck to expand like the light, fluffy pastries. Follow these steps to prepare sesame balls dim sum and watch your luck grow.


Instructions


1. Stir the dark brown sugar into the boiling water until it's completely dissolved.








2. Put the rice flour in a large mixing bowl and with a spoon, make a well in the center. Pour the brown sugar and water mixture into the well and stir until the dough is thoroughly mixed.


3. Put a small amount of rice flour on your hands, and shape the dough into small balls about the size of golf balls.


4. Form the red bean paste into smaller balls consisting of about 1 tsp. of paste.


5. Press a hole into the dough with your finger and push the bean paste into the hole. Seal the edges of the dough so the bean paste is covered. Continue using your hands to roll the balls into a perfect circle, and then roll each one in sesame seeds.


6. Heat the oil to 320 to 350 degrees in a deep fryer or wok and fry the sesame seed balls in small batches. When they begin to turn light golden brown and float to the surface of the oil, use a large spoon or spatula to apply gentle pressure to each ball against the side of the wok or fryer. Continue turning and pressing gently until the sesame seed balls have approximately tripled in size.


7. Line a large tray with a thick layer of paper towels, and put the fried sesame seed balls on the tray to cool. Serve the sesame balls dim sum warm, or refrigerate them and re-heat to puff them up again before serving.
