Cook Seafood Mussels

In ancient times, the Romans began cultivating the mussels. So for many centuries, this seafood dish has been prepared in a variety of ways. Although considered a gourmet dish, mussels are quick and easy to cook, since they are stemmed and not boiled. You can serve mussels with various sauces including cream sauce, tomato sauce or just white wine. In this recipe, a sauce will be made using only onions, garlic and wine.








Instructions


Cook Seafood Mussels


1. Sort through mussels. Examine each mussel and eliminate any mussels that are opened or smell bad.


2. Remove the beards. Beards are what the mussels use to attach themselves to rocks and other things under the water. Simply pull the beard off and scrub each mussel.


3. Cook mussels in a large pot containing a small amount of water. Put a lid on the pot and cook over high heat for at least 5 minutes.


4. Create steam. As the water boils over the pile of mussels, lift the lid until bubbling water resides. Replace the lid and turn off the heat, allowing the mussels to steam. Examine mussels again and remove any that did not open while steaming.








5. Make the sauce. In a large saucepan, drizzle olive oil and add the onion and garlic. Saute until golden brown.


6. Add white wine and salt and bring mixture to a boil. While boiling, add 3/4 cup of heavy cream and continue to boil for at least 5 minutes.


7. Drain the mussels and pour the sauce over them. Toss well and serve while hot.
