Make 4 Day Pickles

Make 4 Day Pickles


This pickle recipe is perfect for tiny gherkins.


Instructions


1. Pick 1 gallon of small cucumbers no great than 2 inches in length.


2. Day 1: Wash and scrub the cucumbers clean with a vegetable brush. Pour boiling water over the cucumbers once in the morning, and once in the night.


3. Day 2: Repeat the same process as in day 1, but add in a 1/2 cup of salt.








4. Day 3 Morning: In the morning, drain and prick the little cucumbers with a small prong fork. Make a syrup combining the following ingredients:


3 cups of sugar


3 cups of vinegar


2 teaspoon of whole pickling spice


2 teaspoon of celery seed


3/4 teaspoon of turmeric


Once you've mix it up, simply pour it over the cucumbers.


5. Day 3 Afternoon: In the afternoon, drain the liquid into a cooking pot. Add 2 cups of vinegar to the pot and heat to a boil. Pour the liquid over the cucumbers.


6. Day 4 Morning: In the morning, drain the liquid again into cooking pot. Add 2 cups of sugar and 1 cup of vinegar. Heat it to a boil and pour it over the cucumbers.


7. Day 4 Afternoon: In the afternoon, drain the liquid yet again. Add a cup of sugar, and heat it to a boil. Pack the drained cucumbers into clean, sterilized canning jars. Heat the drained liquid to a boil. Pour the boiling liquid over over the packed cucumbers.


Place the flats and caps onto the jars. Cover the jars with boiling water for 5 to 10 minutes to seal.
