Make Date Muffins

Date muffin are a tasty and nutritious morning or afternoon snack. They are high in fiber and perfect for small parties and bake sales. These date muffins are topped with a rich vanilla icing. To make the muffins more healthy, forget the icing. Read on for the recipe.


Instructions


1. Preheat oven to 350 degrees.


2. Whisk the eggs and sugar together until combined.


3. Sift the flour and baking soda into a fine powder over the eggs and sugar.


4. Add the chopped nuts and dates. Stir until blended.


5. Grease the muffin pan with baking spray or place muffins cups in the pan.


6. Pour the date muffin mix into the pan.








7. Bake for 25 to 30 minutes until golden brown. Check the muffins to see if they are cooked all the way through. If they are not done, place them back in the oven for 10 more minutes.


8. Allow the muffins to cool after taking them out of the oven.


9. Melt the butter in the microwave or on the stove in a sauce pan.








10. Mix the butter and powdered sugar thick and creamy. Add vanilla to taste.


11. Spread the icing on top of the muffins and serve.
