Keep Peach Preserves From Turning Brown

Keep preserves vibrant with the addition of a little vitamin C.


When you make homemade peach preserves, keep it looking as good as it tastes by preventing it from turning brown. Peach preserves will turn brown when exposed to air, even once it is in a sealed jar, if you don't add some form of citric acid or vitamin C to the recipe. Homemade peach preserves makes delicious holiday gifts for friends and loved ones, or you can keep the treat yourself to spread on toast, scones and other baked goods.


Instructions


1. Prepare the peach preserves according to your recipe, by peeling and pitting the fruit. Chop the fruit in a food processor and boil it with the recommended amount of sugar and pectin.








2. Prevent the preserves from turning brown by adding 1 tbsp. of fresh-squeezed lemon juice per one cup of fruit to the boiling mixture; the lemon juice may also help facilitate the preserves' thickening process.


3. Stir the lemon juice into the preserves thoroughly with a spoon. Pour the preserves into a sterile glass jar and continue the canning process.
