Eggless potato salad is picnic friendly.
Classic potato salad recipes often contain mayonnaise, chopped hard-boiled eggs or both. But you can make potato salad that will still be great even if you omit or replace these ingredients. Egg-free vegan mayonnaise works well in any cold salad. Seasoned chopped tofu makes a wholesome stand-in for chopped hard-boiled egg. In addition, some potato salad recipes are egg-free to begin with. German potato salad, rich with bacon, and oil-and-vinegar potato salad, light and zingy, both add interest to your picnic table and contain no egg.
Instructions
1. Replace egg-containing mayonnaise with vegan mayo or other substitutes in classic
2. Omit chopped hard-boiled egg from classic potato salad recipes. While chopped eggs are a nice touch in potato salad, they are by no means required, and many classic recipes omit them. Perk up classic potato and mayo base with lemon juice, lemon zest and plenty of chopped celery.
3. Replace hard-boiled egg with tofu. Dress chopped firm tofu with a mixture of vegan mayonnaise, chopped parsley, yellow mustard, apple cider vinegar and just a bit of salt, turmeric and minced garlic. Stir this flavorful yellow mixture into your potato salad in place of chopped hard-boiled eggs.
4. Make German potato salad. This hearty potato salad contains chopped bacon and uses bacon fat to add rich flavor. It also contains vinegar, additional oil, and onion or other aromatics and can be served warm. German potato salad is traditionally egg free.
5. Make an oil-and-vinegar potato salad. Instead of dressing potato salad with mayo or a mayonnaise substitute, use an oil and vinegar dressing. Any of your favorite salad oils and vinegars will work. Try olive oil and white wine vinegar, or balsamic vinegar for a delicious Italian-style dressing, and add plenty of minced garlic and chopped fresh basil.
