Make Sweet Potato Salad With Lime Vinaigrette

Sweet potato salad with lime vinaigrette is a simple, easy to prepare salad that compliments a variety of dishes in many different settings. Sweet potato salad can be served before an elegant main dish like braised pheasant with tangerine and raisin curry or with simple grilled chicken or fish. Sweet potato salad also makes an excellent light lunch when served with a slice of hot bread and butter with a glass of brown ale or full-bodied, oak-rich white wine.








Instructions


1. Preheat the broiler.


2. Combine the fresh lime juice, white wine vinegar and lime zest in a large mixing bowl. Slowly add the extra virgin olive oil while whisking continuously. Stir in the chopped fresh cilantro, garlic and sea salt to taste and set aside until needed.








3. Add the sliced sweet potatoes to the lime juice vinaigrette and cover with plastic wrap. Let the sweet potatoes marinate in the vinaigrette for 15-20 minutes.


4. Transfer the sweet potato slices to the preheated broiler with a slotted spoon, reserving the vinaigrette in the mixing bowl. Cook the sweet potatoes for 6 minutes on each side or until they are tender.


5. Put the cooked sweet potatoes back in the bowl with the remaining lime vinaigrette and add the red bell pepper, spring onions, pineapple juice and freshly ground black pepper to taste. Toss the mixture to combine thoroughly with wooden spoons.


6. Transfer the salad to a large serving platter and pour any lime vinaigrette that remains in the bowl over the salad. Serve immediately while the sweet potatoes are still warm.
