Make Sure Your Crepes Are Nice And Thin

Thinner crepes have a nicer texture.








Crepes are delicious no matter how you make them, but they are particularly tasty when they are thin enough to bring out their delicate flavors. Thin crepes are also easier to wrap around cheese or fruit without breaking or unrolling. A frequent mistake that causes crepes to be too thick is using batter that doesn't have enough liquid in it.


Instructions


1. Make the batter thin enough that it spreads quickly across the hot skillet, and be sure that there are no lumps in it. If you leave lumps in it, they will prevent the second side from cooking properly after you flip the crepe over.


2. Hold the skillet in your hand when you pour the batter onto it and quickly move it from side to side. Doing so will allow the batter to spread thinly before it bakes into a solid crepe.


3. Put a bit of oil onto the skillet in between making crepes. If you let the skillet get dry, it will be harder for the batter to spread and create a thin crepe.


4. Add some oil directly to the batter and stir it in if your crepes are not coming out thin enough. This will make the batter more easily spreadable when you put it on the hot skillet.
